Blend in the
water at medium speed (about.7500 rpm), the chicken base using an Omni GLH
general laboratory homogenizer (Omni PowerGen homogenizer or high-speed mixer). Add and blend in Trehalose, potassium chloride and salt mixture
at medium speed. Add and blend in all remaining dry ingredients--starches,
maltodextrin, onion and garlic powders, beta-carotene and white pepper. Melt
the mono- and di-glycerides in the soybean oil and blend. Blend in the oil at
high speed (.about.10,000 rpm). Add remaining water and blend at low speed,
.about.5000 rpm, to a uniform consistency.
